This homemade tomato carrot soup recipe is the ultimate comfort food! It’s loaded with flavors from the roasted tomatoes, carrots, and onions. This soup has a smooth, creamy texture and is ready in 30 minutes or less.

Soup season is here and I could not be any happier! Everyone has their own version of their favorite tomato soup. My version is simple and easy to make. We eat it year-round.

This soup comes out perfectly every single time and is even better the next day. The roasted carrots develop extra sweetness that’s unmistakably noticeable in the soup.

The carrots provide a vibrant orange color. The soup is scrumptious, warm, and satisfying. All of the flavors intertwine so well together and I am excited to share it with you.

You can make this soup with can or fresh tomatoes. I love using fresh ingredients as much as I can. Luckily, we live close to multiple farmer’s markets and grocery stores that carries fresh produce. If you don’t want to deal with the hassle of going to the store, feel free to use what you have on hand. Aside from the quarter cut tomatoes and large chunks of carrots, here are a few other ingredients I have included in this soup and the reasons why I use them:

  • Onion – You may use any onions you like. Red onions are low in calories but high in vitamins and minerals.

  • Olive Oil – Try to use good quality olive oil. You will also need 2 tablespoons of oil todrizzle over the vegetables. It will make roasting the veggies easier.
  • Kosher Salt and ground pepper – This isthe quickest and easiest way to season your food.
  • Fresh Herbs – You may use dry or fresh herbs in this dish.For this recipe we used fresh herbs such as basil and parsley from my garden to the soup while blending. This helps to tie in the “earthy” flavors.

This vegan tomato soup from scratch is so easy to make! All you need are the six ingredients I listed above and 30 minutes to make this roasted tomato soup with carrots. It doesn’t get much easier than that.

Follow my tips and I’ll show you how to make the tomato carrot soup perfectly every time.

Let’s start withroasting the vegetablesas it is very simple to do, and one of my favorite preparation methods when making soups; all of the flavors comes to life!

First, you’ll want to wash, cut, and align the vegetables onto a sheet pan, then coat the vegetables with olive oil.Tomato Carrot Soup Recipe (6)Next, lightly season the vegetableswith kosher salt and ground pepper. You can also use peppercorn as well.Then, roast the vegetablesin the oven at 425 degrees for 25 minutes.

After 25 minutes, remove the vegetables from the oven. Let cool. Transfer the vegetables to a high speed blender or a Vitamix along with the liquid from roasting.

Add the herbs. Then run the blender until everything is creamy, smooth, and hot for 6 minutest and 30 seconds on the highest level.

If you do not have a high speed blender, a regular blender will work as well. Next, simply transfer to a small saucepan, bring to a light boil, then reduce and simmer for 10 minutes; stirring occasionally. Ingredients

  • 4 Large Tomatoes Quartered
  • 2 Large Carrots Peeled & cut into 5 pieces
  • 1 Onion Quartered
  • 2 Tbsp. Olive oil
  • 1 Tbsp. Fresh basil
  • 1 Tbsp. Fresh parsley
  • Salt Or to taste
  • Ground Black Pepper Or to taste
  • 2 ½ Cups Warm water Or vegetable Stock

Instructions

  • Preheat the oven to 425 degrees. On a sheet pan assemble the ingredients. Drizzle the olive oil over the vegetables, thenlightlyseason with salt and pepper.

  • Roast for 25 minutes at 425 degrees.

  • Place the vegetables in a high speed blender along with the juice. Add 2 ½ cups water and the fresh herbs, and season with salt and pepper. Blend until smooth for 6 ½ minutes.

    If you do not have a high speed blender, use a regular blender to blend until smooth. Pour the blended soup in a saucepan, season with salt and pepper. Allow simmering for 10 minutes. Stir. Serve warm and enjoy with cheesy bread or crackers.
