Going vegan is definitely a difficult transition, especially if you love fresh sushi. Sushi is enjoyed every day by people all around the world. If you decide to go vegan, you definitely don’t have to miss out on this delicacy!

This vegan sushi roll made with quinoa is the perfect way to satisfy your cravings. There are many plant-based substitutes you can use to make vegan sushi as well. Avocado, cucumber and mushrooms all taste great when they are rolled up into a sushi roll!

You don’t need any special equipment or experience to make these rolls. It’s one of my favorite plant-based meals and makes me feel extra fancy at dinnertime as well.

About the ingredients

  • Quinoa – Substituting the rice for quinoa makes this an extra healthy recipe. And, it’s a lot more filling than a traditional vegan sushi roll made with rice.
  • Cucumber – Fresh cucumber compliments the subtle flavors of the nori sheets and adds a nice refreshing crunch.
  • Avocado – Avocado is a staple in my sushi rolls. It adds a nice creamy texture that’s hard to beat.
  • Carrot – I love the bright orange color of carrots and feel it adds a nice sweet flavor to these vegan rolls. You can also use sweet potato if you prefer.
  • Rice vinegar, wasabi and soy sauce – All of these condiments will contribute to the flavor of the sushi rolls.
  • Seaweed nori sheets – Yes! Seaweed sheets are vegan and considered a staple in many vegan diets. You can find these at many Asian grocery stores, but my local supermarket has them as well.

This is a very basic recipe that is also highly customizable. If you want to add any other vegetables, it’s really easy to do so.

If you want the quinoa on the outside of your vegan sushi recipe, flip the seaweed over at this point. Put half the portion of carrots, cucumber, and avocado on the closest edge of the seaweed to you. Then, roll the sushi roll up.

Recipe Tips and FAQs

  • Do I need a sushi mat to make this recipe? – You do not need a sushi mat to make this recipe. You can use a piece of parchment paper instead. But, if you like making sushi, I suggest getting a mat to make the job easier!
  • What other vegetables can I use? – You can use any vegetables you want in this recipe. I like to mix it up with mushrooms, beets, potato, and even peas!
  • Is this recipe gluten free? – Yes it is. Make sure your soy sauce is also gluten free if you are on this dietary restriction.
  • How can I prevent my rolls from falling apart? – The first time I tried to make sushi rolls, they made a mess. But, they still tasted delicious! It definitely takes practice, but once you master it, you’ll be making these on a weekly basis.
  • Tip: Always make sure to rinse your quinoa before cooking it! This will prevent a bitter aftertaste.
  • Tip: Use fresh avocado that is not too firm. You want an avocado that is the same ripeness level as guacamole.

These vegan quinoa sushi rolls will satisfy your craving and leave you feeling full.

Equipment

  • sushi mat or hand towel

Ingredients

  • ¼ Cup Quinoa Dry
  • ½ Cup Water For cooking the quinoa
  • 1 Medium Carrot Sliced
  • 1 Small Cucumber Sliced
  • ¼ Cup Avocado Cubed
  • 1 Tbsp Wasabi
  • 2 Tbsp Rice vinegar
  • 2 Full sized Seaweed nori sheets For rolling

Instructions

  • Bring 1/2 cup water to a boil then reduce heat to medium/high.

  • Add the quinoa to the water and cook for 12 minutes, stirring every few minutes(or, follow package instructions).

  • Remove heat and set aside.

  • In a medium mixing bowl combine wasabi and rice vinegar and whisk until thoroughly combined.

  • Add the cooked quinoa to the wasabi mixture and mix with a large spoon until thoroughly combined.

  • Cut the carrot and cucumber into 4 sections each vertically.

  • Lay down a sheet of seaweed vertically on a sushi mat or a piece of parchment paper.

  • For the mat, fold it in half lengthwise and cover it with plastic wrap

  • Use half the quinoa to fill one roll.

  • Make a flat layer of quinoa on the seaweed like a sheet over a mattress.

  • If you want the quinoa on the outside, flip the seaweed over at this point.

  • Put half the portion of carrots, cucumber, and avocado on the closest edge of the seaweed to you.

  • Roll tightly, then slice into bite-sized pieces.

Notes

Sushi rolling definitely takes practice! It’s okay if you rolls don’t turn out perfect. They’ll still taste delicious and satisfy your craving!
