Sourdough Dessert Recipes

We carefully reviewed this collection of sourdough dessert recipes to make sure each recipe meets our criteria of: 1) using whole foods and 2) calling for a sufficient souring time on the grain*.

*Why sufficient souring time? Combining the sourdough starter and flour and letting them sour together for 6 to 8 hours or more allows the sourdough starter to “work on” the rest of the flour and make it nutritious and digestible.

Enjoy!

FAQs

Is it OK to eat sourdough bread everyday? ›

Is it healthy to eat sourdough everyday? You could eat sourdough every day, but it isn't necessarily healthy to do so. A healthy diet is characterized by balance and moderation. Whether or not it is healthy for you to consume sourdough every day depends on the rest of your diet.

What is the healthiest flour for sourdough bread? ›

Compared to whole wheat flour, rye flour is said to be the most nutrient- and amylase-dense option for a sourdough starter. Overall, it has a lower gluten protein content than wheat flour, which means it produces slack, sticky, and dense doughs.

What is the secret to a good sourdough starter? ›

There is no single best ratio, but I've found a ratio of 1:5:5 fed twice daily at 12-hour intervals to produce a sourdough starter that's strong and healthy. This ratio corresponds to 20% ripe starter carryover, 100% water, and 100% flour (a mix of whole grain rye and white flour) at each feeding.

Is olive oil good with sourdough bread? ›

The olive oil complements the typical sourdough flavor to produce a mellower bread with a beautifully even and moist crumb. Even though this is a high-hydration dough, it is not difficult to make and is very beginner-friendly!

When should you not eat sourdough bread? ›

I'll share my tips on the best way to store sourdough and a plan on the best way to eat it too. Sourdough bread will keep well for up to 3-5 days at a moderate room temperature of 18-20°C or 64-68°F. The warmer and more humid the conditions become, the more chance the sourdough has of spoiling.

Is sourdough good or bad for the gut? ›

Sourdough bread may be easier to digest than white bread for some people. According to some studies, sourdough bread acts as a prebiotic, which means that the fiber in the bread helps feed the “good” bacteria in your intestines. These bacteria are important for maintaining a stable, healthy digestive system.

What's the best flower to use for sourdough bread? ›

Any flour containing starch is suitable for a sourdough starter, since it is the sugar that the microbes feed on. Glutenous flours, such as spelt, einkorn, rye, and wheat, tend to work best.

What is the best flower to use to make sourdough bread? ›

Bread flour (or baker's flour) is a high protein, white flour that is milled specifically for baking bread and sourdough. You'll get the best results for your sourdough bread from using bread flour. The most popular bread flour in the US is King Arthur Bread Flour.

What protein is best for sourdough bread? ›

You can make sourdough with all-purpose or “plain” flour, but you will get better results with higher protein flours like “bread flour” or “strong flour” which typically have about 12.5% protein. All-purpose flours have about 11% (or lower) protein.

Do you have to discard sourdough starter every time you feed it? ›

It would be best if you discarded some portion of your starter each time you feed it unless you want to continue to let it grow. Eventually, you need to discard the used “food” (flour and water) that's been used to sustain your starter during the last fermentation period.

Is 70 degrees too cold for sourdough starter? ›

maybe 68-70ºF (20-21ºC). "Room Temperature" makes our starters sluggish and our baking even harder. Goldie elegantly warms your starter jar, bringing your starter up to the “Goldilocks Zone" of 75-82ºF / 24-28ºC - not too hot, not too cold.

What does baking soda do to sourdough starter? ›

because it reacts with the acid from the sourdough starter to create carbon dioxide gas, which provides leavening. You don't want to add baking soda to the starter you are maintaining, because baking soda will raise the pH. The yeast will not grow unless the pH is around 3.5.

Should I add honey to my sourdough starter? ›

Honey has enzymes that can impact the rise of the dough. This is especially true of raw honey. To minimize this, you can blanch the honey. Mix the honey called for in the recipe with some of the water, stir and heat to a boil.

Can I add honey to sourdough bread? ›

Honey whole wheat sourdough takes the nutty richness of 100% whole wheat and adds a sweet twist with honey, creating an artisan bread that's hard to resist. Easy to make if you're familiar with sourdough artisan bread, sweet and delicious. You're going to love this sourdough bread with honey and whole wheat flour.

Can you add butter to sourdough bread? ›

Butter, technically a dough enrichment, tenderizes bread dough and limits gluten development, yielding a softer, more tender crumb and a richer flavor. The butter in this sourdough babka dough makes the interior tender—and delicious.

Can you eat too much sourdough bread? ›

Like most things, if you eat too much sourdough bread it can make you very gassy. However, in comparison to yeast leavened breads and store bought white breads, sourdough bread should actually help you to fart less!

Can you eat sourdough bread everyday and lose weight? ›

Of course, eating sourdough bread alone won't cause weight loss. But, as part of a balanced diet, it has the potential to provide you with some important nutrients that can ultimately contribute to weight loss. Important to remember if you're looking to make healthier choices; what you top your sourdough with matters.

Is sourdough bread as fattening as normal bread? ›

The bottom line. Sourdough is a healthier alternative to regular white or whole wheat bread. Although it has comparable nutrients, the lower phytate levels mean it is more digestible and nutritious. The prebiotics also help to keep your gut bacteria happy, and it may be less likely to spike blood sugar levels.
